4 lbs potatoes

5 eggs, boiled and peeled

1 medium onion, finely chopped

2 tbsp white vinegar

¼ cup extra virgin olive oil

1 cup mayonnaise

1 tbsp brown mustard

1 tbsp dried dill

½ tsp garlic powder

1 tsp salt

1 tsp black pepper

Directions: Boil the potatoes until a fork can be easily inserted. Drain and cool.

Finely chop the onion either by hand or with a food processor. In a bowl, add the mayonnaise, vinegar, mustard, olive oil, dill, garlic powder, salt, pepper and mix well. Add the chopped onion. If needed, adjust the seasonings to taste.

Peel the boiled potatoes and cut into small pieces. Chop the eggs and add to the potatoes. Pour the mayonnaise mixture over the potatoes and mix well. Chill. If you prefer a garnish, sprinkle dried dill over the top.
